TUNA AND RICE BURGERS 
3 tbsp. oil
1 lg. onion, chopped
1 c. finely chopped celery
1/2 c. parsley, chopped
3 cloves garlic, minced
4 c. cooked rice
1 (6 1/2 oz.) can tuna
2 c. peeled and grated carrots
2 lg. eggs, lightly beaten
1/2 c. flour
1/4 tsp. black pepper
Salt to taste
Oil for frying

Add 3 tablespoons oil to skillet and heat for frying. Add onion, celery, parsley and garlic; saute 10 minutes. Place rice, tuna, carrots, eggs, flour and pepper in a bowl. To above add cooked ingredients and mix. Blend and shape into patties. Add flour if patties don't shape up. Heat oil for frying to medium heat. Fry patties until brown on both sides. Serves 4 to 6.
