SPECIAL K COOKIES 
3 c. Special K cereal
1 c. regular all-purpose flour
1 tsp. baking powder
1/4 tsp. salt
1/2 c. butter, softened
2/3 c. sugar
1 egg
1 tsp. vanilla

1. Measure cereal, crush to 2 cups. Stir together 1 cup of crushed cereal, the flour, baking powder and salt. Set aside.

2. In large mixing bowl, beat butter and sugar until light and fluffy. Add egg and vanilla. Beat well. Add flour mixture. Mix well. Shape tablespoon sized pieces of dough into balls; roll in remaining 1 cup cereal. Place 2 inches on ungreased cookie sheets.

3. Bake at 375 degrees about 12 minutes. Remove immediately and cool on wire racks. Makes about 2 1/2 dozen.
