FIRE AND ICE 
1 lg. purple onion, sliced in rings
6 lg. firm tomatoes, peeled and quartered
1 green bell pepper, cut in chunks
1 red bell pepper, cut in chunks
3/4 c. cider vinegar
1/4 c. water
2 tbsp. sugar
1/2 tsp. salt
1/2 tsp. pepper
1 tsp. celery seed
1 1/2 tsp. mustard seed
1/4 tsp. garlic salt

Place onion, tomatoes, and peppers in a glass bowl. Bring remaining ingredients to a boil. Boil only 1 minute, then pour over the vegetables and chill. This is better served the same day it is made, but chilled for a few hours. Serves about 6.
