CLARE'S MINT BROWNIES | |
21 1/2 oz. pkg. Pillsbury fudge brownie mix 1/2 c. water 1/2 c. oil 1 egg 1/2 tsp. mint extract FILLING: 1/2 c. butter, softened 3 oz. pkg. cream cheese, softened 2 1/2 c. powdered sugar 3 tbsp. creme de menthe syrup Green food coloring FROSTING: 6 oz. semi-sweet chocolate chips 1/3 c. butter Heat oven to 350 degrees. Grease bottom only of 13 x 9 inch pan. Mix brownie ingredients. Spread in greased pan. Bake 33-35 minutes until brownies are set. Do not overcook. Cool completely. In medium bowl combine 1/2 cup butter and cream cheese. Beat until light and fluffy. Add powdered sugar, creme de menthe syrup and green food coloring. Beat until smooth. Spread over cooled brownies. Melt chocolate bits and butter over low heat until smooth. Remove from heat. Cool 15 minutes before spreading over mint filling. Refrigerate at least 1 hour before cutting. Store in refrigerator. Makes 48 bars. |
