STEAMED CARROTS AND ONIONS 
1/2 med. size onion, chopped
3 c. coarsely grated or thinly sliced carrots
1 tbsp. butter
1/2 tsp. salt
A few grains of pepper

Cook onions in butter for 1 minute in a medium saucepan over low heat. Add carrots. Season with salt and pepper. Cover tightly and steam until tender, about 5 to 8 minutes. Serves 6.
