RICE PUDDING 
2 c. brown rice, cooked
1/2 c. raisins
1/2 tsp. grated lemon rind
1 tsp. lemon juice
1/2 c. honey
1/2 tsp. vanilla flavoring
3 eggs
2 1/2 c. milk
1/4 tsp. salt

Place rice, raisins, lemon rind, and lemon juice in a buttered 1 1/2 quart baking dish. Beat together honey, vanilla flavoring, eggs, milk, and salt and pour over rice mixture. Stir and mix. Bake at 325 degrees for 30 minutes or until set. Serves 4 big uns!
