SCOTCH CAKE 
2 c. flour
2 c. sugar
1 stick butter
1/2 c. Crisco
4 tbsp. cocoa
1 c. water
1/2 c. buttermilk
1 tsp. baking soda
1 tsp. vanilla
2 eggs, beaten slightly
1 tsp. cinnamon

Sift together flour and sugar. Boil together butter, Crisco, cocoa and water and pour over flour and sugar. Add buttermilk, soda, vanilla, beaten eggs and cinnamon. Mix well, pour into a greased and floured 11"x16" baking pan. Bake about 30 minutes at 400 degrees.

SCOTCH CAKE ICING:

1 stick butter
4 tbsp. cocoa
6 tbsp. milk
1 box powdered sugar
1 tbsp. vanilla
2 c. pecans
2 c. coconut (optional)

Start mixing icing about 5 minutes before cake is done. Mix together butter, cocoa, milk and bring to a boil and remove from heat. Add powdered sugar, vanilla, pecans and coconut. Mix well and spread on cake while still hot.
