SHRIMP CREOLE | |
1 c. flour 1 c. oil 2 c. onion, chopped 1/2 c. bell pepper, chopped 2 cloves garlic, minced 1 pack shrimp 1 large can tomatoes 2 small cans tomato paste or tomato sauce 1 can Ro-Tel 1/4 tsp. cayenne parsley flakes Make roux of flour and cooking oil. Add onions, bell peppers and garlic and cook until soft. Add tomatoes and tomato paste. Mix well and cook about 5 minutes. Add about 6 cups water and the rest of the seasonings. Let simmer for 1 hour. Add shrimp and cook for 15 minutes. Add parsley and continue to cook until sauce is thick. Serve over hot rice. |
