COCONUT CHEWS 
1/3 c. butter, room temperature
1/2 c. honey
3/4 c. molasses
4 egg whites
1 3/4 c. whole wheat flour
1/4 tsp. salt
1/4 tsp. baking soda
1 c. shredded unsweetened coconut
1/2 c. chopped nuts

Preheat oven to 350 degrees. In medium size mixing bowl, beat together butter, honey, and molasses until well blended. Add egg whites and beat well for several minutes, until fluffy.

In separate bowl, combine flour, salt, and baking soda. Stir into butter mixture. Add coconut and chopped nuts, mixing thoroughly. Spread mixture evenly in buttered 9 x 13 inch baking pan and bake for 30 minutes. Let cool 5 minutes, then cut into 1 1/2 inch squares. Makes 35 squares.
