SEAFOOD QUICHE 
2 tbsp. minced shallots
3 tbsp. butter
1/2 c. (1/4 lb.) diced scallops
1/2 c. (1/4 lb.) diced lobster
1/2 c. (1/4 lb.) diced shrimp
1/4 tsp. salt
Pinch pepper
2 tbsp. Madeira wine or dry white vermouth
3 eggs
1 c. heavy cream
1 tbsp. tomato paste
1 (10 inch) pastry shell
1 c. shredded Swiss cheese

Preheat oven to 375 degrees. Cook shallots in butter. Add seafood: stir gently for 2 minutes. Sprinkle with salt and pepper. Add wine, simmer for 1 minute; cool. Beat eggs, cream and tomato paste. Blend seafood gradually into egg mixture. Pour into pastry shell. Sprinkle cheese over top, bake 25 to 30 minutes until puffed and brown.
