SWEET-SOUR MEATBALLS WITH RED
CABBAGE
 
1 med. onion, chopped fine
1 tbsp. butter
1/2 c. vinegar
1 tsp. caraway seed
3 cloves
1 bay leaf
1 lb. ground beef
1 egg
1/4 c. dry bread crumbs
1/4 c. chopped raisins
1/4 tsp. nutmeg
1 tsp. salt
1/4 tsp. pepper

Cook onion in butter 5 minutes. Add vinegar, caraway seed, cloves and bay leaf; cover and simmer 5 minutes.

Mix together remaining ingredients; shape into 16 balls (no browning!). Add to first mixture and cook, stirring with fork a few minutes.

Mix together: 2 tbsp. brown sugar 1 tart apple, peeled and diced 1/2 tsp. salt 1/4 tsp. pepper

Put cabbage mixture in Dutch oven; add meatballs with liquid. Cover and simmer 45 minutes. Put cabbage on serving dish and surround with meatballs. 4 servings.
