BEEF CURRY (with rice) 
1 lb. beef
1 1/2 tbsp. ginger
4 oz. butter
2 lg. onions
3 cloves garlic
1 1/2 tbsp. flour
1 tsp. pepper
1/2 tsp. ground cloves
1/2 tsp. cardamom
1 tsp. coriander
1 pt. beef stock
1/2 c. cream
1 tsp. sugar
2 tsp. turmeric
Juice of 1 lemon
1 apple, 1 c.
1 c. raisins

Cut beef 1 inch cubes - let stand with the ginger and salt for 1 hour, stirring once. Melt butter, add and fry chopped onions and garlic. Add flour and spices, cook 1 minute. Add stock and meat and bring to boil, reduce heat, simmer 1 1/2 hours until tender.

Remove from heat - add cream, stir well. Add sugar and turmeric and stir again. Simmer gently additional 15 minutes. Add lemon juice. 1/2 hour before serving add 1 chopped apple and 2 cups of golden raisins. Serve with rice.

Serve these condiments in separate dishes: Thin cucumber slices, chutney, cashew nuts chopped, bananas, toasted coconut, tomatoes chopped----for topping.
