SPANISH RICE 
6 slices bacon
1/4 c. bacon drippings
1/2 c. chopped onion
1/2 c. chopped green pepper
1 (28 oz.) can tomatoes, cut up
1/2 tsp. celery salt
3/4 c. long-cooking rice
1/2 c. shredded Cheddar cheese
Green pepper rings to garnish

Microwave bacon until crisp, crumble bacon, set aside. Add onion and green pepper to drippings in pan. Microwave on High for 5 minutes. Stir in tomatoes and celery salt. Cover. Microwave on HIGH for 6-8 minutes. Add rice. Stir until moistened. Cover. Microwave at 30% 25-3 minutes or until rice is tender, stirring twice. Sprinkle bacon and cheese over mixture. Garnish with green pepper. Microwave on HIGH for 1 minute or until cheese is melted.

Since microwave ovens vary in power, you may need to adjust your cooking time.
