SKILLET HAM SALAD 
1/4 c. chopped green onions
1/4 c. chopped green pepper
2 c. diced cooked ham
1 tbsp. fat
3 to 4 med. potatoes, cooked, diced (approx. 3 c.)
1/4 tsp. salt
Dash of pepper
1/4 c. mayonnaise or salad dressing
1/2 lb. sharp process American cheese, diced (1 1/2 c.)

Cook onions, green pepper and meat in fat stirring occasionally until lightly browned. Add potatoes, salt, pepper and mayonnaise. Heat, mixing lightly. Stir in cheese, heat just until cheese begins to melt. Garnish with green onions if desired. Makes 4 servings.
