CHICKEN STUFFED PAPAYAS | |
2 tbsp. butter 1 chopped onion 1 minced garlic clove 2 chopped slices of bacon 2 c. diced cooked chicken 1 tbsp. lemon juice 1/2 c. white wine 3 tomatoes, peeled and chopped 2 large firm papayas 1 green apple, sliced 1/4 cup ricotta cheese paprika hot sauce Melt butter in saucepan and add onion, garlic and bacon. Sauté for 5 minutes until onion is soft. Stir in chicken, lemon juice, wine and tomatoes. Simmer for 5 minutes. Peel the papayas and cut them in half lengthwise; scoop out seeds. Arrange papaya halves on a baking dish, cut side up. Heap chicken mixture into each half. Decorate each with apple slices and 1 tbsp. of ricotta. Sprinkle with pinch of paprika and bake in a preheated 350°F for 40-45 minutes. Serve with hot sauce. |
