STUFFED CHICKEN BREAST 
6 chicken breasts
1/2 c. lemon juice
1 lb. cream cheese
1/3 c. green onions, chopped
1/2 tsp. tarragon
1/2 tsp. salt
6 strips bacon; optional

Mix in bowl - cream cheese, green onion, tarragon, and salt.

Pound chicken breast until flat; dip in lemon juice. Place generous amount of cream cheese mixture in middle of breast. Roll up; trying to cover cream cheese completely.

OPTIONAL: Roll 1 bacon strip around chicken breast. If necessary, secure with toothpicks.

Bake at 350 degrees for 30-40 minutes, near end of baking time, pour remaining lemon juice over chicken breasts.
