SUNNY PARFAIT 
1/2 lb. marshmallows (about 32)
3/4 c. boiling water
1/4 c. frozen orange juice concentrate
1 c. whipping cream (whipped)
Orange food coloring

Add marshmallows to boiling water and stir until dissolved. Add orange juice concentrate. Chill until thick. Then whip until fluffy. Fold in whipped cream. To half the mixture add a few drops of food coloring. Arrange alternate layers of the two mixtures in parfait glasses. Chill.
