FRIED CHICKEN FOR CAMPING 
1 frying chicken, cut in serving pieces
1/2 c. biscuit mix
1 pkg. dried onion soup mix
2 tsp. dried parsley
1 tsp. salt
1/4 tsp. pepper
Cooking oil
1 clean paper bag

NOTE: Wash and cut up chicken at home where plenty of water is available. Put chicken in zip shut bags and place in a cooler with ice just before the trip to the campsite. Mix the dried ingredients and put in a covered plastic container to bring to the campsite.

AT THE CAMPSITE: Prepare a fire of about 30 charcoal briquettes until they are white hot. Make the fire under a grill or in a fire pit where you can use a portable grill.

Take chicken out of plastic bags and drain well. Shake in mixture of biscuit mix, onion soup mix, parsley, salt and pepper in a clean bag. Place large skillet on grill and heat oil. Add chicken and brown on all sides. When well browned, take away a few of the coals to lower the temperature. Cover and cook for another 30 to 40 minutes until tender. Makes 4 servings.

One time I was making this chicken over the campfire and I heard some campers walking by say, "Boy, it smells like a restaurant out here."
