SOUTHERN STYLE BANANA "PUDDIN'" | |
3/4 c. sugar 3 tbsp. flour Dash of salt 4 eggs 2 c. milk 1/2 tsp. vanilla Vanilla wafers 5 or 6 med. ripe bananas, sliced Preheat oven to 425 degrees. Combine 1/2 cup sugar, flour and salt in top of double boiler. Mix in 1 whole egg and 3 egg yolks. Stir in milk. Cook uncovered over boiling water, stirring constantly until thickened. Remove from heat; add vanilla. Spread small amount of custard on bottom of 1 1/2 quart casserole. Cover with a layer of wafers. Top with sliced bananas. Pour about 1/3 custard over bananas. Continue to layer wafers, bananas and custard to make 3 layers each, ending with custard. Beat remaining 3 egg whites stiff, but not dry. Gradually add remaining 1/4 cup sugar and beat to form stiff peaks. Cover surface of pudding. Bake 5 minutes or until delicately brown. Serves 8. |
