CINNAMON BUNS | |
2 pkg. yeast 1/4 c. warm water 2 c. milk 1/2 box seedless raisins (8 oz.) 6 lg. tbsp. Crisco 1 tsp. salt 2 eggs 1 1/2 tsp. grated lemon rind 1/3 c. sugar 7 or 8 c. plain flour Brown sugar Butter Cinnamon spice ICING: 1/2 box XXXX sugar 1/4 c. milk 1 tsp. vanilla flavoring In large mixing bowl, that has been rinsed with warm water, measure warm water in bowl. Sprinkle yeast packages over. Add 1 teaspoon sugar. Mix well with spoon until dissolved. Add warm (tepid) milk. Mix in enough flour to make like cake batter. Get all lumps out, but do not beat, just stir (wooden spoon). Let stand until double in bulk or you see a lot of bubbles, probably 20 minutes. In smaller bowl, mix Crisco, sugar, salt. Add eggs, mixing well. Add lemon rind and raisins. Mix with yeast mixture. Add enough flour to make dough. Pour out on board and knead well, sprinkling flour as needed. Place in greased bowl. Let rise until double in bulk. Divide dough in 2 parts. Roll dough out 1/4 inch thick. Rub with butter, sprinkle with brown sugar and cinnamon. Roll up like jelly roll, slice. Place in greased baking pan. Let rise until about double. Bake at 400 degrees until light brown, drizzle icing over while hot. |
