PICANTE SAUCE 
1 qt. tomatoes
1 med. green pepper, cut up
1 med. onion, cut up
2 med. jalapeno peppers or hot red peppers, chopped
1 or 2 cloves garlic
1/2 c. vinegar
1 tsp. salt
Dash dried oregano, crushed
Dash cayenne red pepper
Dash ground cumin

In blender container coarsely grind unpeeled tomatoes. Add green pepper, onion, hot peppers and garlic. Process until vegetables are coarsely crushed. Stir vinegar and salt into vegetables. Transfer vegetables to 3 quart saucepan. Simmer uncovered for about 25 minutes.

Stir in oregano, cayenne and cumin. Season to taste with salt. Store in refrigerator in tightly closed container or process 15 minutes in sterilized jars in boiling water bath. Yield: 2 1/4 cups.
