APPLESAUCE CAKE WITH COCONUT
TOPPING
 
1 3/4 c. cake flour
1 c. sugar
1/4 tsp. salt
1 tsp. cinnamon
1/2 tsp. cloves
1/2 c. butter
1 egg, beaten light
1 c. hot thick applesauce

Sift flour, soda and spices. Cream butter and sugar. Add flour and applesauce, mix until smooth after each addition. Bake in a greased 9 x 13 inch cake pan for 50 to 60 minutes or until cake tester comes out clean (350 degrees).

TOPPING:

3 tbsp. butter
5 tbsp. brown sugar
2 tbsp. cream

Mix and spread over the cake immediately as it comes from the oven. Put 1/2 cup coconut on top of the above mixture. Put back in oven under hot broiler for a few minutes.
