CHEESE POTATO SOUP 
2 med. onions
3 stalks celery
5 carrots, peeled & diced
1/4 c. butter
10 med. potatoes
3 lbs. ham cubes
2 c. half & half
1 lb. Velveeta cheese
Instant mashed potatoes

Saute onions, celery and carrots in butter. Add ham, 10 potatoes and water to make 4 quarts total. Cook at medium until tender. Add 2 cups half and half and 1 pound Velveeta cheese. Simmer on very low heat. Thicken with instant mashed potatoes.
