IMPOSSIBLE PECAN PIE 
1 1/2 c. chopped pecans
3/4 c. packed light or dark brown sugar
3/4 c. milk
3/4 c. light or dark corn syrup
1/2 c. buttermilk baking mix
1/4 c. butter, softened
4 eggs
1 1/2 tsp. vanilla

Preheat oven to 350 degrees. Grease a 9 x 1 1/4 inch pie plate and sprinkle pecans in pie plate. Beat remaining ingredients until smooth. Pour in pie plate, pecans will rise to top. Bake until knife inserted in center of pie comes out clean, 50-55 minutes. Cool 5 minutes before cutting. There's no need to make a crust, the pie makes its own crust. Serve with whipped cream if desired.
