OMELETTE PARMENTIER 
4 potatoes
6 eggs
4 tbsp. butter (or 2 tbsp. butter and 2 tbsp. oil)
4 slices crisp bacon, cut in sm. pieces
Chopped fresh herbs when available

Cook potatoes; peel and cut in small pieces. Heat butter in large frying pan. Put potatoes in hot butter and fry for 5 minutes, turning frequently. Beat eggs with salt and pepper. Pour eggs over potatoes and mix several times so omelette cooks well. When omelette is dry on sides, but still moist in center; add bacon and herbs. Slide omelette over a wide dish - do not fold omelette. Cheap and body-warming in winter!
