MOCK PECAN PIE 
1/4 c. butter
1/2 c. sugar
1 c. dark corn syrup
1/4 tsp. salt
3 eggs
1/2 c. coconut
1/2 c. quick cooking oatmeal
1 (9 inch) unbaked pie shell

Cream butter to soften. Add sugar gradually and cream until fluffy. Add syrup and salt; beat well. Add eggs, one at a time, beating after each one added. Stir in coconut and oatmeal. Pour into unbaked pie shell and bake at 350 degrees for 50 minutes or until knife inserted in center comes out clean. Cool before serving.
