BREAKFAST SOUFFLE 
1/4 c. butter
18 eggs, lightly beaten (Egg Beaters can be used)
1 c. sour cream
1 c. milk
1 tsp. salt (optional)
1/4 c. grated Parmesan
1/2 c. green onion
1/4 c. chopped fresh parsley

Serves 12. Preheat oven to 350 degrees. Melt butter in a 9 x 13 x 2 inch pan in oven. Combine remaining ingredients. Pour into hot pan and bake 30 to 40 minutes. It will be golden and puffed up when ready. Cut and serve immediately. This recipe can be adapted to your taste. Add cheese, mushrooms or green pepper. Add a croissant and slice of fruit for a very impressive meal.
