BREAD PUDDING | |
5 thick slices of bread 2 tbsp. soft butter 3 c. scalded milk 3 eggs 1/4 tsp. salt 1/2 c. sugar 1/2 tsp. vanilla 1/4 tsp. cinnamon Butter a 10 x 6 1/2 x 1 3/4 inch glass baking dish. Adjust oven rack 6 to 7 inches above oven floor. preheat oven 10 minutes, set at 350 degrees. Toast bread lightly then spread with butter while hot. Cut slices in quarters. Fit neatly in prepared dish, overlapping slightly. Scald milk. Beat eggs slightly in a 2 quart bowl. Stir in salt and all but 2 tablespoons of the sugar, then hot milk and vanilla. Pour over toast and let stand 10 minutes, pressing toast down lightly to soak up milk mixture. Blend cinnamon with remaining sugar and sprinkle over top. Bake directly on oven rack 25 to 30 minutes, or until pointed knife inserted in center comes out clean and top is appetizing brown. Serve warm or cold. |
