ZUCCHINI BAKE 
3 c. cubed zucchini
4 slices bacon
3 ripe tomatoes or 1 (16 oz.) can tomatoes
4 slices Velveeta cheese
1 onion, sliced
1 sm. green pepper, chopped
1/4 c. rice (not Minute rice)
1 tsp. sugar
Pepper and salt

Chop bacon and fry, then drain off grease. Layer in casserole dish zucchini, green pepper, onion, bacon, rice, tomatoes, and cheese in that order. Bake 1 1/2 hours at 350 degrees.
