ONE BOWL DINNER ROLLS
2 3/4 to 3 1/4 c. unsifted flour
1/4 c. sugar
1/2 tsp. salt
1 pkg. active dry yeast
5 tbsp. softened butter
2/3 c. very hot tap water
1 egg, room temperature

In large bowl, mix 3/4 cup flour, salt, sugar, and yeast (undissolved). Add softened butter. Gradually add very hot water to dry ingredients and beat for 2 minutes at medium speed. Add egg and 1/2 cup flour (or enough to make a thick batter). Stir in enough additional flour to make a soft dough. Turn out onto lightly floured board. Knead until smooth and elastic (about 8 to 10 minutes).

Place in greased bowl, turn to grease top. Cover and place in warm place to let rise until double in bulk (about 1 hour). Pinch dough down, turn out onto lightly floured board. Shape or cut rolls and place on pan. Cover, let rise in a warm place on pan (about 1 hour). Carefully brush rolls with melted butter. Bake in a hot oven at 400 degrees about 10 to 15 minutes or until done.
