PINEAPPLE GRASSHOPPER MOLD 
This is a very different and easy recipe that is a frozen dessert rather than a gelatin-based dessert. I found this recipe many years ago in a magazine in a doctor's office. I made it every Christmas and my family loved it, but it got displaced and we all grieved. For years I combed the internet for something similar but could never find anything like it. Now 40 years or so later I finally found my copy and can't wait to make it again!

1 1/3 cups miniature marshmallows
1/3 cup Creme de Menthe
1 (20 oz.) can crushed pineapple (in heavy syrup)
green food coloring
1 pint heavy whipping cream
2 egg whites, beaten
4 tsp. sugar
1/4 tsp. salt

1. Melt marshmallows and salt in syrup from pineapple. Add Creme de Menthe and 2 or 3 drops of food coloring. Chill until firm.

2. Fold in whipped cream and beaten egg whites.

3. Turn into a slightly greased mold and freeze.
