CHICKEN WITH BROCCOLI 
2 tbsp. butter or spray pan with Pam
Vegetables (broccoli or asparagus)
1/2 lb. cut in pieces & cooked vegetables
2 c. coarsely chopped cooked chicken (or ham may be used)
1/2 c. chopped onions
1 c. grated cheese (I mix yellow & white cheese)
1 pkg. (8 oz.) corn muffin mix

Melt butter in 8 inch square pan, or a small round shallow casserole dish. Arrange vegetables in pan. Add chicken and sprinkle with cheese. Prepare muffin mix according to package directions. Carefully spoon batter on top of cheese as evenly as possible.

Bake preheated oven at 400 degrees for about 30 minutes or until muffin topping is brown. (Can of cream of chicken soup may be used as the sauce over the casserole.)
