JUDY'S RICOTTA BALL 
3 lbs. Ricotta cheese
4 c. (Presto) cake flour
7 eggs
1 c. sugar
1 tsp. baking powder
1 tsp. cinnamon
3 lbs. solid shortening (Crisco)
Confectioners sugar for dusting
2 tbsp. vanilla

Mix first 6 ingredients together. In large deep pot or deep fryer, heat shortening until very hot. Drop batter by heaping teaspoonful into hot oil. Approximately 12 balls to pot at a time. Cook until golden brown. Drain on absorbent paper or paper toweling. Cool and coat with confectioners sugar.
