YELLOW TOMATO PRESERVES 
4 lb. sm. yellow tomatoes
2 lemons
1 tbsp. ginger root
3 1/2 lb. sugar
1 tbsp. whole mace

Wash tomatoes and prick each one with a fork. Add sugar, 1 lemon sliced thinly, and juice of 1 lemon. Mix. Tie mace and ginger root in thin cloth bag. Add to tomatoes. Heat slowly and simmer gently until fruit is transparent. Remove tomatoes. Boil syrup until thick. Add tomatoes and heat to boiling. Can in jars.

FOR RED TOMATO PRESERVES:

To the same amount of tomatoes, only red ripe ones, add:

5 c. sugar
1 lemon

Let stand overnight, just tomatoes, sugar and lemon. Cook until mixture is clear and thick. Put in prepared jars and seal. (Do not add ginger root or mace.)

ALSO NOTE: GREEN TOMATOES can be used but leave out ginger and add 1 stick cinnamon to main ingredients at top.
