PARSLEYED POTATOES 
6 med. red potatoes
1 med. onion
1 tbsp. fresh parsley
3 tbsp. butter
1 tsp. paprika
Salt & pepper

Pare potatoes and dice into 1 inch pieces. Cook until soft but not mushy. While cooking, mince onion and saute with diced parsley in butter. Season with paprika, salt and pepper to taste. Cook until onions are tender. When potatoes are done, drain and pour mixture over potatoes. Mix gently. Serve hot. Yields 6 servings.
