PINEAPPLE UPSIDE DOWN CAKE 
4 tbsp. butter
1/2 c. brown sugar
6 slices pineapple
6 cherries
Pecan halves
1 1/2 c. self-rising flour
1 c. sugar
1/2 c. shortening
1 egg
1 tsp. vanilla

Melt butter in 10 inch iron skillet. Dissolve brown sugar, 1 tbsp. pineapple syrup. Put in skillet. Place pineapple with cherry in center. Place pecan halves around pineapple slices.

Mix sugar, shortening, egg, vanilla, flour and 1/2 cup pineapple syrup. Beat until well blended. Pour over pineapples. Bake 35-45 minutes at 350. Cool 5 minutes - turn out on large plate.
