CHICKEN CACCIATORE 
1 lb. boneless chicken
1 sm. onion
1 garlic clove or 1 tsp. garlic powder
2 tbsp. oil
1 (28 oz.) can crushed tomatoes
1 (8 oz.) can tomato sauce
1 tsp. salt
Oregano, basil, parsley, all to taste
1 c. green pepper
2 tsp. sugar
1 1/2 c. instant rice

Brown chicken, onion, and garlic in oil. Add both tomatoes, seasonings and pepper. Bring to a boil. Stir in rice. Cover and remove from heat and let stand 5 minutes. Stir and serve. This is a great fast supper. Makes six 1 cup servings.
