IRISH POTATO CASSEROLE 
6 med. potatoes
1 1/4 c. of sour cream
1 c. sharp Cheddar cheese
Salt and pepper
1/2 c. chopped green onions (stems included)
1 stick butter

Wash potatoes, add to water in 2 quart saucepan. Bring to boil until tender but firm. Remove potatoes from water, drain and cool. Then remove skin and grate in bowl. Salt and pepper to taste.

Melt butter in saucepan, then add cheese, sour cream, onions to butter. Mix all together and add mixture to potatoes and mix well. Place in casserole dish and bake for 35 to 40 minutes at 400 degrees. Remove casserole from oven and serve.
