BEST MINT TEA
4 regular black tea bags
2 peppermint or spearmint tea bags
1 c. sugar
pinch of baking soda

Bring tea to a boil, add a pinch of baking soda to remove any bitterness, steep for 3-5 minutes.

Remove tea bags and add sugar. Add enough cold water to make 3 quarts total.

Cook's Note: We use canning jars to make tea in our test kitchen. A quart size jar works well. Leave in microwave for 10-15 minutes before touching (jar is hot!). Cover with plastic storage cap and refrigerate, if serving cold. 1/2 cup fresh mint leaves may be substituted for tea bags (strain after steeping).

Since microwave ovens vary in power, you may need to adjust your cooking time.
