PASTITSIO 
2 c. uncooked elbow macaroni
1 lb. ground beef or lamb
1 (16 oz.) can tomatoes
1 env. sloppy joe seasoning mix
1/2 c. water
2 c. sauce
1 c. shredded cheddar or American cheese

Cook and drain macaroni. Cook ground beef in large skillet, stirring to crumble; pour off excess fat. Stir in tomatoes, seasoning mix, and water; simmer 10 minutes, stirring occasionally.

Stir in macaroni. Spoon into shallow 2-quart baking dish. Prepare sauce; pour over macaroni mixture and sprinkle with cheese. Bake in 350 degree oven 20-30 minutes until bubbling hot. Yield: 6 servings.

SAUCE:

Melt 2 tablespoons butter in saucepan. Combine 2 tablespoons flour, 1 teaspoon salt, and 1/8 teaspoon ground cinnamon. Stir in butter. Add 2 cups milk gradually; cook and stir over medium heat until sauce comes to boil and thickens.

Lightly beat 2 eggs; stir a little hot sauce into the eggs. Return egg mixture to hot mixture and heat to simmering.
