CARROT CHOCOLATE CHIP COOKIES 
2 lbs. carrots
3 c. sugar
3 eggs
1 1/2 c. oil
6 c. flour
2 tbsp. baking powder
1 tbsp. cinnamon
1 1/2 tsp. salt
1 tbsp. baking soda
1 tbsp. milk
1 tbsp. vanilla
3 c. miniature semi-sweet chocolate chips

Beat sugar, eggs and oil until smooth. Cook and drain carrots. Slice and mash. Add to sugar-egg-oil mixture. Beat until smooth. Add flour, baking powder, cinnamon and salt to mixture. Stir until smooth.

Dissolve baking soda into milk. Add vanilla. Mix into mixture and stir until smooth. Add chocolate chips. Drop onto cookie sheets. Bake at 350 degrees for 10 minutes. Makes 9 dozen.
