DAD'S PEAR RAISIN PIE | |
PEAR FILLING: 2 (21 oz. ea.) cans pear slices, drained well (Del Monte) 1/2 cup all-purpose flour 1/2 to 3/4 cup brown sugar 3/4 cup raisins Preheat oven to 350°F. Place pear slices in large bowl. Add the 1/2 cup flour, brown sugar and raisins. Stir well and set aside. CRUST FOR DOUBLE CRUST PIE: 2 cups all-purpose flour 1/2 cup canola oil 1/4 cup water Combine flour, oil and water. Mix until moist. Divide into 2 balls. Roll out with rolling pin to fit pie plate. Spoon pear filling into crust. Cover with top crust. Sprinkle with sugar and poke with a fork a few times. Bake at 350°F for about 60 to 65 minutes until light brown on top. Note: if crust is getting too dark during baking, wrap edges with foil and continue baking until done. Makes 1 pie.
