SALMON LOAF 
1 (16 oz.) can salmon, drained and flaked
3/4 c. evaporated skim milk
1/2 c. cracker crumbs
2 eggs
1/4 c. minced onion
1/4 c. pimento slices
2 tbsp. parsley flakes
Dash of salt
Dash of pepper

About 1 1/4 hours before serving - in bowl, combine all ingredients until well mixed. Pour into greased 8 x 4 inch loaf pan. Bake in 350 degree oven 50 to 60 minutes until browned. Makes 6 servings.
