BASIC COUNTRY BUTTER COOKIES 
1/2 c. butter
1 tsp. vanilla extract
2 c. all purpose flour
1/4 tsp. salt
3/4 c. light brown sugar
1 lg. egg
1/2 tsp. baking powder

Preheat oven to 350 degrees. In large bowl, mix at medium speed the butter, brown sugar and vanilla until light and fluffy. Beat egg in well. Add last three ingredients with mixer at low speed, blend well. Flatten dough to disc shape, wrap in plastic and refrigerate for 30 minutes. Work 1/4 dough at a time, roll out to 1/8 inch to 1/4 inch on lightly floured surface and out into desired shapes or mold into shapes. Place on ungreased cookie sheet about 1 inch apart. Bake 8 to 15 minutes depending on thickness of dough (should be lightly browned). Cool and store in airtight container. Makes 2 1/2 to 5 dozen. Cookies dipped in melted chocolate or decorated with Betty's decorative icing look terrific!
