BROWN RICE MUSHROOM RING 
1 c. brown rice, cooked
1/2 lb. mushrooms, sliced
1 tbsp. grated onion
2 tbsp. parsley, chopped

Combine all ingredients, then spoon into a 1 quart ring mold (use non- stick spray) and set in a pan of hot water. Bake in a preheated 350 degree oven for 30 minutes. Turn out into a platter. Serves 4 to 6.
