APPLE CAKE WITH CREAM CHEESE
FROSTING
 
2 eggs
2 c. sugar
1/2 c. oil
1 tsp. vanilla
2 c. all purpose flour
1/2 tsp. baking soda
2 tsp. cinnamon
1/2 tsp. nutmeg
4 c. diced, peeled apples
1/2 tsp. salt
1 c. chopped walnuts

FROSTING:

1 (3 oz.) pkg. cream cheese, room temperature
3 tbsp. butter, softened
Pinch of salt
1/2 tsp. vanilla
1 1/2 c. confectioners' sugar

Beat eggs until light and fluffy. Gradually add sugar, oil and vanilla. Sift together next 5 ingredients and add to first mixture. Stir in apples and walnuts. Put in greased 9"x13" pan and bake about 45 minutes at 350 degrees. Let cool in pan on rack 10 to 15 minutes then spread with frosting.

FROSTING: Mix all ingredients together until smooth.
