CHICKEN PATE' 
1 (2-inch square) piece orange peel
1 1/2 c. cooked chicken breast (boneless, skinless)
2 tbsp. butter, softened (butter)
4 tsp. chopped onion
1 tbsp. orange juice
1/8 tsp. salt, if desired
2 tbsp. chopped fresh parsley

In food processor, process orange peel until finely chopped, add chicken, butter, onion, orange juice and salt. Process until well blended and smooth.

Spread parsley on sheet of waxed paper. Form chicken mixture into a log shape; roll in parsley.

Serve with French bread or fat free crackers.

Makes about 1 1/4 cups.
