SPEEDY LASAGNA 
No-boil lasagna noodles - what a great time-saver! Look for them in the dry pasta section of the supermarket.

8 oz. ground turkey sausage
1 1/2 c. low-fat cottage cheese (sm. curd)
1 (4 1/2 oz.) jar sliced mushrooms
1 (15 1/2 oz.) jar chunky spaghetti sauce
1/4 c. frozen chopped onion
1/4 c. frozen chopped green pepper
1 egg white
1/2 c. shredded Mozzarella cheese (2 oz.)
1 tsp. dried parsley flakes
Nonstick spray coating
6 no-boil lasagna noodles
2 tbsp. grated Parmesan cheese

In a 1 1/2-quart microwave-safe casserole break turkey sausage into pieces. Cover. Micro-cook on 100% power (High) for 3 to 4 minutes or until no longer pink, stirring after 2 minutes; drain. Meanwhile, place cottage cheese in a colander to drain. Drain mushrooms.

Stir mushrooms, spaghetti sauce, onion, and green pepper into turkey in casserole, then set aside. In a medium mixing bowl, slightly beat egg white. Then stir in cottage cheese, Mozzarella, and parsley.

Spray in 8 x 8 x 2-inch microwave-safe baking dish with nonstick coating. Run noodles under WARM water (do not boil noodles). Place 2 noodles in dish (if necessary, break to fit). Spread with half of the cheese mixture and 1/3 of the sauce. Repeat layers, ending with sauce. Sprinkle with Parmesan cheese.

Cover dish with vented microwave-safe plastic wrap. Cook on 70% power (Medium to High) for 15 to 18 minutes or until heated through, rotating dish a quarter turn after 8 minutes. Let stand for 5 minutes before cutting. Makes 6 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
