INDIVIDUAL LIME CHEESECAKES | |
12 vanilla wafers 3/4 c. 1% low fat cottage cheese 1 (8 oz.) pkg. Neufchatel cheese, softened 1/4 c. + 2 tbsp. sugar 2 eggs 1 tbsp. grated lime ring 1 tbsp. lime juice 1 tsp. vanilla extract 1/4 c. vanilla low fat yogurt 2 med. kiwi fruit, peeled, sliced & halved Line 13 muffin pans with paper baking liners. Place 1 vanilla wafer in the bottom of each liner. Place cottage cheese in container of an electric blender or food processor; top with cover and process until smooth. Combine Neufchatel and cottage cheese in a medium bowl; beat at medium speed of an electric mixer until creamy. Gradually add sugar; mix well. Add eggs, lime rind, lime juice and vanilla; beat until smooth. Spoon cheese mixture evenly over vanilla wafers. Bake at 350 degrees for 20 minutes or until cheesecakes are almost set. (Do not over bake.) Let cheesecakes cool completely on a wire rack. Remove from pans, and chill thoroughly. Spread vanilla yogurt evenly over cheesecakes and top each with 3 kiwi fruit slices. 12 servings, 132 calories per serving. |
