BUMPY PANCAKES | |
1 lg. apple, cored 1 tbsp. lemon juice 3 eggs or 3/4 c. Egg Beaters 3/4 c. milk 2 tbsp. butter, melted or cooking oil 2 tsp. sugar 1/2 tsp. cinnamon 1/2 tsp. almond extract (optional) 3 c. bread cubes (5-6 slices torn or cubed of whole wheat bread) 1/3 c. raisins 1 1/2 tsp. baking powder Finely chop apple; pour lemon juice over apple to prevent browning. Beat together eggs, milk, butter or oil, sugar, cinnamon and almond extract. Add bread, apple, and raisins. Stir in baking powder. Drop by spoonfuls or 1/4 cup onto greased (just a little) and preheated griddle. Bake until small bubbles appear; turn and bake until golden brown. Makes 12 pancakes (2-3 servings). NOTE: If bread is quite dry, allow bread to soften in the liquid a little while before baking. This tastes similar to bread pudding and requires no syrup or other sweetener because its sweet naturally. |
